This late-blooming grape is picked in the cool of the night to avoid as much oxidation as possible and preserve its fresh character. Cold maceration, débourbage and fermentation at low temperatures in inox cuves. Since 1980, this almost forgotten grape variety has been on the rise again. It gives the white wines strength and structure and ensures more storage capacity.
