Hand harvesting and strict selection. Half of the grapes undergo 5 days of skin maceration, while the other half is simply pressed directly and fermented. After cool fermentation, the wine matures further in amphorae, where it rests on the lees. The shape of the amphora creates a natural flow, keeping the wine in constant motion, which enhances its flavorful character. Minimal use of sulfites.
