climate

39% of the fruit comes from Waihopa Valley (typicity), the rest from 5 other valleys including Wairau Valley. The vineyards are fermented separately under cool temperature. Short aging in stainless steel with vegan friendly clearance. After bottling, this wine can be drunk to taste for the next 3 years.

soil

6 different vineyards. Varying soils with poor sandy soils with many stones and older, loamy soils with good water management.

vinification

a mixture of both hand picking and machine harvesting is used to pick the Sauvignon Blanc grapes. After immediate pressing, all of the juice is cold settled for 48 hours, then racked, with gross lees separated Maturation: stainless steel (95%), in addition 5% into one year old French oak barriques, allowed to ferment and age for six months on lees prior to being back blended with the main portion. Lightly filtered prior to bottling.
