Delicate perfume of strawberries, cherries and a hint of civet cat. Smoky and toasty notes accompany more complex impressions of cedar and tobacco, adding class to the wine. On the palate, its complexity is reaffirmed in all its finesse. Impressions of forest floor and truffle also come more to the fore now. Elegant but long finish. Great wine after the Burgundian example... And if you compare it to the prices there... A bargain!

It's fine yet complex character goes ideally with lamb, game or aged beef but also with oily fish like salmon or tuna.

climate

Stellenbosch has a warm maritime climate with high rainfall in the winter period. Temperatures in this winter period are below 20 degrees Celsius. The summer months there are hot , dry and pleasant. With varying influence from the Atlantic Ocean and the Stellenbosch mountains.

soil

Variation of Hutton and Clovely subsoil (weathered granite) with generally quite a lot of clay. This helps retain water.

vinification

100% Pinot Noir. Manual picking and rigorous selection. Classic temperature-controlled fermentation in Burgundy barrels with regular pumping over and pigeage. After fermentation, it matures further for 12 months on a mix of new French oak (40%) and 2nd fill barrels (60%).
